having trained with some of the most prestigious chefs in Europe. As
executive chef for Marco Pierre Whites' Mirabelle restaurant in Mayfair,
Charlie was awarded a Michelin star for his cooking, putting him in the
league of distinguished chefs in London today.
He has received many accolades for his cooking and accomplishments to the catering community.

get to by all types of transportation, with well developed road, air, rail,
and interstate coach services.
By Car
Port Macquarie is approximately 5 hours relaxed drive north of Sydney
(stopping to "rest, revive, survive" every two hours) and situated just off
the Pacific Highway, which bypasses Port Macquarie about 10 km to the west.
From the Pacific Highway driving north, exit at the sign posted Oxley
Highway for Port Macquarie. If you are coming from the north, turn left
into Hastings River Drive from the Pacific Highway.
The Observatory is an ideal stop over during longer journeys to and from
popular holiday destinations like Byron Bay, Tweed Heads, the Gold Coast and
Brisbane.

Sunshine Express flies into Port Macquarie airport from all mainland capital
cities, plus the Gold Coast and Cairns. Flights are approximately 60 minutes
direct from Sydney and Brisbane. Charter operators provide more flexible
services, with Port Aero services serving Port Macquarie via Coffs Harbour,
Ballina and the Gold Coast, while RedPath Regional Air Services links Port
Macquarie to Brisbane with week day flights via Lismore.
By Bus/Coach
Port Macquarie is well serviced by the Travel Coach Australia network
(McCafferty/Greyhound), and Premier Motor Services, which offer daily
departures from both Sydney and Brisbane, stopping at other popular
destinations on route where you can join the service.
By Train
The Sydney to Brisbane rail link passes through Wauchope, 21 kilometres to
the west, with a connecting bus service to Port Macquarie. Daily CountryLink
services to and from Sydney and Brisbane, stop at Wauchope.
